Bacon and Eggs: Variations on a Classic

If you mention breakfast, I’m already thinking about my favorite paleo friendly breakfast, bacon, and eggs.

Regardless of whether you are looking to shed some extra pounds or build muscle, a high protein breakfast is an essential part of the day. Beginning your day with a protein rich meal is also known to jumpstart your brain for school or work. Luckily, Bacon and Eggs can be both nutritious and delicious. But not all bacon and eggs are created equal, so I’ll show you what to look for when you’re shopping. Also We’ll also cover some bacon eggs variations on this bodybuilding breakfast classic.

Bacon, Sweet Potato Hash, And Eggs

Now, without a doubt, this is one of the best recipes I can have. This meal, of course, delicious at any time of day, but breakfast sure is a good start. It’s also paleo and doesn’t require a lot of effort to cook.

Ingredients:

  • 1 sweet potato, cubed, small
  • Bacon: 4 thick slices (uncured, center cut is the healthiest)
  • Sliced scallions :1/2 cup
  • A teaspoon of paprika
  • Salt and pepper
  • 3 eggs (organic, free-range are healthiest)

If you are one of those who love having it spicy, you can always add ½ teaspoon of hot sauce or cayenne and this will warm things up.

Preparation:

  1. Chop the sweet potato into even and small cubed pieces.
  2. Put the sweet potato cubes in a pot with water on high heat. Cover and keep cooking until the water begins to boil. Then turn down the heat to low and let it simmer for around 5 minutes.
  3. If you can poke the potatoes easily with help of a fork, but they don’t seem soft enough to be mashed; they are done. Drain all excess water and even dab with a towel to remove as much water as possible.

Time for Bacon:

While your potatoes are cooking, we can work on the bacon.

  1. Put a pan on medium high heat, no need to coat as the bacon fats will be sufficient..
  2. Flip the bacon occasionally but don’t overdo it. When the color darkens it’s ready to remove from the pan.
  3. After you have worked upon the bacon, you can now add sweet potatoes to it. The key is to fry them in the bacon fat and use a spatula or a wooden spoon for turning it over. When it has turned slightly brown, you can add scallions, salt and pepper, paprika and even the bacon and mix them up.

This is all and now you can serve it with eggs of your choice.

Bacon And Eggs Cup

It is one of my favorite recipes and is also the easiest ones to make. The best thing is that you can make these ahead of time and bring them to the office or the gym in the morning. If you need a paleo appetizer at your next party, try this one.

Ingredients

  • 6 slices of bacon (uncured, center cut is the healthiest)
  • 6 eggs (organic, free-range are healthiest)
  • Muffin tin

Preparation:

  1. Preheat your oven to 350 degrees. Now, take out the muffin tin and coat with non-stick spray.
  2. Take a slice of bacon and starting from the bottom, make sure to line the whole edge of the tin with bacon.
  3. Once you have made the bacon lining, crack an egg into each lined cup. You should allow the bacon to stick to the outside of your tin. If the pieces end up curling inwards, don’t worry.
  4. Allow it to bake for 15 to 20 minutes. You can be flexible with the time based upon how cooked you want the eggs to be.

That is it, that simple.

Bacon and Eggs Mini Omelet

This recipe derives from the previous one. It is also quick to make and delicious.

Ingredients:

  • 4 eggs (organic, free-range are healthiest)
  • Add vegetables of your choice. My favorites are kale, onions, and hot peppers.
  • 1 piece of sausage, cooked, your choice.
  • 4 slices of bacon (uncured, center cut is the healthiest)
  • Muffin tin

Preparation:

  1. Start by preheating the oven to 350 degrees.
  2. Chop all your vegetables and the sausage into small pieces.
  3. Crack the eggs in a bowl, with a splash of milk if you like, and make sure to whip them.
  4. Add the vegetables along with the sausage and then mix all with the eggs.
  5. Using the same method as above, line your muffin tin with bacon strips, creating a liner for the omelet.
  6. Pour the mixture in the cups and bake the whole thing for 15 or 18 minutes.
  7. Let them cool 5 minutes or so before attacking.

Scrambled Eggs, Vegetables, And Bacon

This isn’t hugely different either but a classic. No baking is involved in this one. We will simply be pan-frying this dish for quick delivery.

Ingredients:

  4. Cook the bacon first and drain some of the grease when finished.
  5. Use the bacon fat and the same pan to cook your eggs and veggies. This will save you clean up time and taste great.

Conclusion

The idea behind today’s post is to show you that with even just a few ingredients, there are a million ways to keep things fresh in the kitchen. Cooking at home is essential to maintaining a budget and a healthy diet. Remember, when you’re buying eggs, go for organic, free range or farm fresh also you should read up on is bacon good for you.
